The development of wheat-Bambara groundnut composite rusk will reduce the cost of importing wheat flour and promote the utilisation of the underutilised Bambara groundnut which is a cheap legume crop that is available in sub-Saharan Africa. It is a ready-to-eat food, widely consumed, long shelf-life and good eating quality.
Bambara groundnut is highly rich in protein (19%), carbohydrates (63%) and fat (6.5% in the form of oil. It contains high-quality proteins with a good balance of essential amino acids especially high lysine (6.8%) and methionine. It is a neglected and underutilized crop even though they contain a high amount of dietary fibre and protein.
